Slow-cooker Maple Ham

7-8 pound bone-in spiral-cut ham
1 cup dark brown sugar
1/2 cup all natural maple syrup
2 cups pineapple juice

The Directions.

Use a 6-7 quart slow cooker. Unwrap the ham, and discard flavor packet. Place it into your stoneware, flat-side down. Rub brown sugar on all sides. Pour on maple syrup and pineapple juice. Cover and cook on low for 6-8 hours. If possible, baste ham with collected juice from the bottom of the crock an hour or so before serving. When cooking is done, remove carefully and let it rest on a cutting board for 15-20 minutes before carving.

White Bean and Kielbasa Stew

1 lb dry white beans, rinsed
14 oz kielbasa, 1/2 inch chunks
4 c chicken broth
1 14 oz can diced tomatoes
1 large onion chopped
6 garlic cloves, chopped
1 t dried rosemary
1 c water
6 c baby spinach
  1. Put all the ingredients except spinach in slow cooker and cook on low for 7-8 hrs or high for 5-6 hrs.
  2. Add spinach just before serving.

Slow-cooker Swedish Meatballs

2 lbs. hamburger
3 cans cream of mushroom soup 2 eggs
1/2 c. minced onions
1 c. bread crumbs or rice

Mix burger, eggs, onions, bread crumbs or rice in a large bowl. Shape into balls about the size of golf balls. Put oil in a skillet to brown the meatballs, just enough oil to cover the bottom of the pan. Drain them on paper towels to get the grease off them. Put one can of mushroom soup in the bottom of your crock pot. Layer some meatballs, then mushroom soup, then meatballs, then mushroom soup, until done. Cook in crock pot for about 3 to 5 hours. Serve over noodles or sliced potatoes.

North Carolina Style Pork

Part 1
1 3-6Lbs Pork Shoulder or Boston butt roast
1 Tbs of Paprika
2 Tbs Brown Sugar (or enough to thinly coat the pork)
1/2 tsp of salt and pepper

Part 2
8-10 oz Cider Vinegar (experiment to your taste)
4 tsp of Worcestershire sauce
1/2 tsp dry mustard
1/2 tsp garlic salt
1/2 tsp sugar
1/4 to 1/2 tsp of Cayenne Red pepper (experiment to your taste of spicy or mild)

DIRECTIONS
Set pork aside, mix all other ingredients in part 1 together and rub over entire pork roast. Then place in crock pot on high for 6-7 hours finish time. Recommend though place on Low for 10-11 hours finish time.

Mix part 2 ingredients together in medium size bowl, before pork roast is done cooking.
When Pork roast is very tender, with a fork, remove roast from crock pot. Chop roast into a very fine degree (basically as much as you can cut it with a sharp knife and fork). Then take a Tablespoon and ingredients from Part 2 (BBQ sauce ingredients) and apply over the chopped roast. Note: Add as much or as little depending on your taste.
